Thin Pancakes (blinchiki)


Ingredients:


3 eggs

2,5 tbsp sugar

1/4 tsp salt

1/3 tsp baking powder

2 tbsp veg oil

200 ml water (around 40 C)

300 ml milk (40 C)

200 g flour

Butter for spreading cooked pancakes


Method:


1. Crack eggs into the mixing bowl, add salt, sugar and mix it with a hand mixer on medium speed about 2 minutes.




2. Mix milk and water, slightly warm it up in a microwave for 40-60 seconds. Pour liquid into the egg mixture and stir.



3. Sift the flour. In this recipe I write about 200 g of flour.


Note: Sometimes you need a little bit more or less. Amount of flour depends on flour type. Usually I use polish cake flour type 450. You need to achieve specific consistency of pancakes’ mixture as I show on the video below. The batter should look like double cream.





4. Add half flour, mix it well. Then add more flour spoon by spoon until you achieve necessary consistency of the batter. Mix it at low speed of the mixer every time.

Then add baking powder and veg oil, stir until smooth. Leave the pancakes mixture for 20 minutes.


To make flat, round pancake is especial art :) I will describe it and show on the video.


1. Heat the pan. You can pour a tiny bit of sunflower oil in a pan (you can use a silicone brush to spread it), or use oil spray, but I usually make pancakes on a dry pan. Use a ladle to pour the batter in the middle of the pan.

2. Acting quickly, tilt the pan from side to side while pouring, forming a circle with the batter.



3. After the surface looks porous and a side are golden, flip the pancake over with a spatula. Fry second side for half of the time you fried the first side.





4. Spread butter over the pancake to make it so (don't miss the edges of a pancake)




You may eat blini with jams, condensed milk, caramel or honey. Also you can make filling for them. It depends on your taste. Filling can be with mince meat, cottage cheese, mushrooms.
