Pancakes made from cottage cheese also known as "syrniki" are usually associated with Russian, Belorussian, Ukrainian cuisines. Fairly simple recipe, takes just 5 minutes for preparing and 10 minutes for cooking.
Ingredients:
250 g of cottage cheese
70 g of flour
30 g of sugar
1 egg
Pinch of salt
Vegetable oil for frying
Method:
1. Mix all ingredients together by spoon until smooth.
2. Wet your hands and form 6 similar balls about 5 cm in diameter. If you can't make balls - the mixture is too thin, add more flour.
3. Heat the pan. Add 1 tbsp of vegetable oil. Put balls onto the hot pan and slightly press it. Cover half the pan with a lid.
4. Fry your syrniki on medium heat on both sides until golden in colour (approx. 5-7 mins for each side).
It's done! It can be serve with sour cream, jams, condensed milk. Mine are with maple syrup.
