Small meat pies or Russian belyashi


✅Ingredients (for 14 pieces):


✅For dough:


450 g bread flour

260 g warm water

40 g veg oil

6 g yeast (fast action)

1,5 tsp sugar

1,5 tsp salt


✅For meat filling 🥩 :


400 g beef (topside)

2 onions

1 medium potato

2 garlic cloves

1 egg

Salt/black pepper


Method:

  1. Combine all ingredients and knead a dough by hands or with a stand mixer. It takes about 3-4 minutes with mixer and a little bit longer by hands. The dough should become smooth and elastic. Leave to rise in a warm place for 40 min.

  2. Finely chop meat, onions, garlic and potatoes with a sharp knife or use a blender. I cut the ingredients into pieces before chopping them in a blender.



3. Add salt, pepper (and any spices you prefer), egg and mix well


4. Divide the dough for 14 balls. Stretch each dough ball with hands or use rolling pin to make a circle about 8-10 cm in diameter.



5. Put 1 tbsp of meat filling into the centre of a dough.


6. Then tuck up the edges of a circle and pinch them together.


7. Place belyashi on a baking tray. Preaheat the oven 180 C.

8. Cover each belyash with whisked egg (use silicone brush)


9. Bake for 30 min. Then take the tray out, and add 1 tbsp of water (or beef stock) into the holes. Plus, put a piece of butter there (1/2 tsp). Bake for 15 more minutes.
